Vegan Candy Cane Fudge

We also made this last year for the holidays.  It came out delicious, had a good texture and set well!

Ingredients:
1 cup vegan semi-sweet chocolate chips (Enjoy Life are a favorite in this house)
1/2 cup cocoa powder
2 tbsp vegan margarine
3 1/2 cups powdered sugar
1/2 cup chocolate soy milk
1 tsp peppermint extract
10 crushed candy canes

Directions:
  1. Grease am 8x8 pan
  2. Combine chocolate chips, cocoa powder and powdered sugar in a bowl.
  3. Place the margarine and chocolate soy milk together in a saucepan over medium heat. Stir together. 
  4. Pour the margarine and soy milk mixture over the dry ingredients. 
  5. Let sit for two minutes.
  6. Stir all the ingredients together. Make sure to stir well so that all the ingredients are evenly encorporated. 
  7. Mix in the peppermint extract and five of the crushed candy canes. Stir well.
  8. Pour the mixture into the baking pan.
  9. Pour the other five crushed candy canes on top of the fudge.  Press the fragments into the fudge with the bottom of a spoon.
  10. Place in fridge until it's fully solidified. I left mine overnight.
