Ingredients:
1 cup vegan semi-sweet chocolate chips (Enjoy Life are a favorite in this house)
1/2 cup cocoa powder
2 tbsp vegan margarine
3 1/2 cups powdered sugar
1/2 cup chocolate soy milk
1 tsp peppermint extract
10 crushed candy canes
Directions:
- Grease am 8x8 pan
- Combine chocolate chips, cocoa powder and powdered sugar in a bowl.
- Place the margarine and chocolate soy milk together in a saucepan over medium heat. Stir together.
- Pour the margarine and soy milk mixture over the dry ingredients.
- Let sit for two minutes.
- Stir all the ingredients together. Make sure to stir well so that all the ingredients are evenly encorporated.
- Mix in the peppermint extract and five of the crushed candy canes. Stir well.
- Pour the mixture into the baking pan.
- Pour the other five crushed candy canes on top of the fudge. Press the fragments into the fudge with the bottom of a spoon.
- Place in fridge until it's fully solidified. I left mine overnight.
