Ingredients:
3/4 cup Earth's Balance margarine
1 cup sugar
2 eggs
1 tsp vanilla
1 tsp salt
2 1/2 cups flour
1 tsp baking powder
Directions:
- Combine margarine and sugar with fork until fluffy.
- Add in the eggs and vanilla.
- Separately combine dry ingredients.
- Blend into wet ingredients 1/2 cup at a time.
- Cover and chill in the fridge for at least one hour.
- Preheat oven to 400 degrees.
- On a lightly floured surface, roll dough out 1/8 inch thick.
- Cut into desired shapes with cookie cutters or the rim of a glass.
- Grease cookie sheet.
- With a spatula, move cookies onto the cookie sheet.
- Bake 6-8 minutes.
