1 cup flour
2 tsp baking powder
1 ripe banana
1 1/4 cup nondairy milk
1/2 tsp cinnamon
fruit or maple syrup to top with
Directions:
- Sift together flour and baking powder.
- In separate bowl, mix the mashed banana with 1/2 cup milk until there are no lumps.
- Mix wet and dry ingredients together.
- Add remaining milk and cinnamon.
- Stir until mixed.
- Cook pancakes in a lightly greased pan until golden brown.
- Garnish with fruit or syrup.
