Coconut Pineapple Bread
NOTE: I've also done it with pureed mandarin oranges in place of the crushed pineapple!
Ingredients:
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/4 cup margarine
1/2 cup sugar
Egg replacer for one egg OR 1 egg
1 tsp vanilla extract
1/4 cup almond or soy milk
1 8 oz can crushed pineapples WITH JUICE or 1 8 oz can mandarin oranges pureed with juice
1/2 cup coconut flakes
Directions:
- Preheat oven to 350
- Lightly grease bread loaf pan
- In large bowl, combine flour, baking powder, baking soda and salt.
- In separate bowl, wisk together margarine and sugar. Then add in egg (Or egg replacer) and vanilla.
- Add the almond milk and dry ingredients to the wet ingredients.
- Stir well to combine.
- Add pineapple or oranges, including juice.
- Gently fold in coconut flakes.
- Bake in preheated oven for about 1 hour.
