Coconut Pineapple Bread

This is one of DH's favorites!
Coconut Pineapple Bread
NOTE: I've also done it with pureed mandarin oranges in place of the crushed pineapple!

Ingredients:
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/4 cup margarine
1/2 cup sugar
Egg replacer for one egg OR 1 egg
1 tsp vanilla extract
1/4 cup almond or soy milk
1 8 oz can crushed pineapples WITH JUICE or 1 8 oz can mandarin oranges pureed with juice
1/2 cup coconut flakes

Directions:
  1. Preheat oven to 350
  2. Lightly grease bread loaf pan
  3. In large bowl, combine flour, baking powder, baking soda and salt.
  4. In separate bowl, wisk together margarine and sugar. Then add in egg (Or egg replacer) and vanilla. 
  5. Add the almond milk and dry ingredients to the wet ingredients. 
  6. Stir well to combine. 
  7. Add pineapple or oranges, including juice. 
  8. Gently fold in coconut flakes.
  9. Bake in preheated oven for about 1 hour.
