Ingredients:
1 1/4 cup sugar
1/4 cup margarine (Prefer Earth's Balance)
2 eggs
1/2 cup almond or soy milk (I use vanilla of either)
2 cups flour
2 tsp baking powder
1/4 tsp salt
2 cups dried cranberries
Directions:
- Preheat oven to 350
- Mix sugar and butter together in medium mixing bowl until completely blended.
- Add eggs one at a time, beating after each addition.
- Stir together flour, baking powder and salt.
- Add wet ingredients to the dry. Stirring after every little bit.
- Stir in cranberries.
- Spoon into 12 muffin tins, filling 3/4 with batter.
- Bake 25-30 minutes until golden brown.
