Cranberry Muffins

We always get a ton of dried cranberries from the food pantry.  Here is one of my favorite things to do with them!

Ingredients:
1 1/4 cup sugar
1/4 cup margarine (Prefer Earth's Balance)
2 eggs
1/2 cup almond or soy milk (I use vanilla of either)
2 cups flour
2 tsp baking powder
1/4 tsp salt
2 cups dried cranberries

Directions:
  1. Preheat oven to 350
  2. Mix sugar and butter together in medium mixing bowl until completely blended. 
  3. Add eggs one at a time, beating after each addition. 
  4. Stir together flour, baking powder and salt.
  5. Add wet ingredients to the dry. Stirring after every little bit.
  6. Stir in cranberries. 
  7. Spoon into 12 muffin tins, filling 3/4 with batter. 
  8. Bake 25-30 minutes until golden brown.
