Vegan Candy Cane Fudge

We also made this last year for the holidays.  It came out delicious, had a good texture and set well!

Ingredients:
1 cup vegan semi-sweet chocolate chips (Enjoy Life are a favorite in this house)
1/2 cup cocoa powder
2 tbsp vegan margarine
3 1/2 cups powdered sugar
1/2 cup chocolate soy milk
1 tsp peppermint extract
10 crushed candy canes

Directions:
  1. Grease am 8x8 pan
  2. Combine chocolate chips, cocoa powder and powdered sugar in a bowl.
  3. Place the margarine and chocolate soy milk together in a saucepan over medium heat. Stir together. 
  4. Pour the margarine and soy milk mixture over the dry ingredients. 
  5. Let sit for two minutes.
  6. Stir all the ingredients together. Make sure to stir well so that all the ingredients are evenly encorporated. 
  7. Mix in the peppermint extract and five of the crushed candy canes. Stir well.
  8. Pour the mixture into the baking pan.
  9. Pour the other five crushed candy canes on top of the fudge.  Press the fragments into the fudge with the bottom of a spoon.
  10. Place in fridge until it's fully solidified. I left mine overnight.

Sweet Potato Pie

Sweet Potato Pie!

Ingredients:
 3    Eggs
 1/2 c  White sugar
 1/4 c  Butter; melted
 1/2 ts Salt
 1/3 c  Almond Milk(about)
 1 ts Vanilla extract
 1 ts Ground cinnamon
 1 ts Ground nutmeg
 2 1/2 c  Sweet potatoes (fresh or canned--heaping cups)
 2 tb Fresh lemon or orange juice
 1    9-inch pie shell; unbaked
 1/2 c  Pecan halves, optional
 
Directions:
 
  1. Beat eggs and sugar
  2. melted butter, salt, milk, vanilla, and spice.
  3.  Blend egg mixture with mashed sweet potatoes and lemon or orange juice.
  4.  Pour into unbaked pie shell or greased 1 1/2 quart baking dish.
  5.  Garnish with pecan halves if desired.
  6.  Bake in preheated 400-degree oven 10 minutes.
  7.  Reduce oven temperature to 375 degrees; bake 40 minutes longer or until golden.

Sugar Cookies

These are Honeybunches favorite sugar cookies.

Ingredients:
3/4 cup Earth's Balance margarine
1 cup sugar
2 eggs
1 tsp vanilla
1 tsp salt
2 1/2 cups flour
1 tsp baking powder

Directions:
  1. Combine margarine and sugar with fork until fluffy.
  2. Add in the eggs and vanilla.
  3. Separately combine dry ingredients. 
  4. Blend into wet ingredients 1/2 cup at a time. 
  5. Cover and chill in the fridge for at least one hour.
  6. Preheat oven to 400 degrees. 
  7. On a lightly floured surface, roll dough out 1/8 inch thick. 
  8. Cut into desired shapes with cookie cutters or the rim of a glass. 
  9. Grease cookie sheet.
  10. With a spatula, move cookies onto the cookie sheet. 
  11. Bake 6-8 minutes.

Apple Brownies

Ingredients:
1/2 cup margarine
1 cup sugar
1 small tub applesauce
3 medium apples (Peeled, cored and thinly sliced)
1 cup flour
1/4 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon plus a little extra to your taste
Dash of nutmeg

Directions:
  1. Preheat oven to 350
  2. Grease a 9x9 baking pan
  3. In a large bowl, beat together the melted margarine, sugar and applesauce until fluffy. 
  4. Fold in apples. 
  5. In separate bowl, mix flour, salt, baking powder, baking soda and cinnamon.
  6. Stir flour mixture into wet mixture until just blended. 
  7. Spread the batter evenly into prepared baking pan. 
  8. Bake 35 minutes in preheated oven, or until a toothpick inserted into middle comes out clean. 

Cranberry Muffins

We always get a ton of dried cranberries from the food pantry.  Here is one of my favorite things to do with them!

Ingredients:
1 1/4 cup sugar
1/4 cup margarine (Prefer Earth's Balance)
2 eggs
1/2 cup almond or soy milk (I use vanilla of either)
2 cups flour
2 tsp baking powder
1/4 tsp salt
2 cups dried cranberries

Directions:
  1. Preheat oven to 350
  2. Mix sugar and butter together in medium mixing bowl until completely blended. 
  3. Add eggs one at a time, beating after each addition. 
  4. Stir together flour, baking powder and salt.
  5. Add wet ingredients to the dry. Stirring after every little bit.
  6. Stir in cranberries. 
  7. Spoon into 12 muffin tins, filling 3/4 with batter. 
  8. Bake 25-30 minutes until golden brown.

Coconut Pineapple Bread

This is one of DH's favorites!
Coconut Pineapple Bread
NOTE: I've also done it with pureed mandarin oranges in place of the crushed pineapple!

Ingredients:
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/4 cup margarine
1/2 cup sugar
Egg replacer for one egg OR 1 egg
1 tsp vanilla extract
1/4 cup almond or soy milk
1 8 oz can crushed pineapples WITH JUICE or 1 8 oz can mandarin oranges pureed with juice
1/2 cup coconut flakes

Directions:
  1. Preheat oven to 350
  2. Lightly grease bread loaf pan
  3. In large bowl, combine flour, baking powder, baking soda and salt.
  4. In separate bowl, wisk together margarine and sugar. Then add in egg (Or egg replacer) and vanilla. 
  5. Add the almond milk and dry ingredients to the wet ingredients. 
  6. Stir well to combine. 
  7. Add pineapple or oranges, including juice. 
  8. Gently fold in coconut flakes.
  9. Bake in preheated oven for about 1 hour.

Banana pancakes

Ingredients:
1 cup flour
2 tsp baking powder
1 ripe banana
1 1/4 cup nondairy milk
1/2 tsp cinnamon
fruit or maple syrup to top with

Directions:
  1. Sift together flour and baking powder. 
  2. In separate bowl, mix the mashed banana with 1/2 cup milk until there are no lumps. 
  3. Mix wet and dry ingredients together. 
  4. Add remaining milk and cinnamon.  
  5. Stir until mixed. 
  6. Cook pancakes in a lightly greased pan until golden brown. 
  7. Garnish with fruit or syrup.

Classic Vanilla Cupcakes

Classic Vanilla Cupcakes:

1/2 cup softened margarine (I prefer Earth's Balance for my baking)
3/4 cup sugar
2 eggs
2 tsp vanilla
1 1/2 cup flour
1/2 tsp baking powder
1/4 tsp salt
2/3 cup almond milk

Preheat Oven to 350 degrees
Cream margarine and salt.
Add eggs 1 at a time beating after each addition.
Stir in Vanilla.
In a separate bowl, stir all dry ingredients.
Add to margarine mixture
Stir in almond milk. 


Pineapple Banana Muffins

Apple Crisp



 My apple crisp recipe:
Peel and cut about 6-7 large apples (Whatever kind you have).

Put them in a bowl. Melt 1/2 stick of margarine or butter in another bowl. Pour that on top. Add about 1 tsp of vanilla, some cinnamon and nutmeg. I didn't measure it, just put how much you like. Stir that around. Melt another 1/2 stick margarine. Pour that onto the bottom of a pan. Add the apple mixture to the pan. In another bowl, melt another 1/2 stick of margarine. Add in 1 cup of quick oats. Stir that around. Add a dash of cinnamon and nutmeg along with another couple drops of vanilla. Stir. Add in some almond or other milk until it gets to the right consistency (A bit thick, but not too thick). Add in 6-7 packages of Demarara raw sugar (Or a few tbsp of whatever sugar you have, could even use sugar substitute). Spoon and pat down the oatmeal mixture on top of the apples in the pan. Cook at 375 for about 20 minutes or so. Our oven cooks fast, so you might need more time. I thought this one was so much better than other recipes. All the recipes I've tried come out too sweet. Some might say this one is not sweet enough, but I like to taste my apples lol. IMO it came out yummy! Of course Princess liked the one with 2 cups of sugar I made last week better. ICK!

Cinnamon Rolls

Cinnamon Roll Recipe:

DOUGH:
2 cups flour
1 tbsp baking powder
1 tsp salt
6 tbsp vegan margarine
3/4 cup nondairy milk (I prefer Almond Milk)

CINNAMON SUGAR MIXTURE:
2 tbsp melted margarine
1/4 cup raw sugar
1 tbsp cinnamon

ICING:
1 tsp margarine
1 cup powdered sugar
nondairy milk

DIRECTIONS:
  1. Preheat oven to 450 degrees. Lightly grease baking sheet.
  2. Mix the dry ingredients for the dough.  Then add margarine and milk.  DO NOT OVERMIX.
  3. Flour the table.  Put the dough on table.  Flour the dough so it's not sticky and kneed it a bit. Roll out into a rectangle about 1/4 inches thick.  Coat with the cinnamon sugar mixture. 
  4. Roll from the long end, forming a tight ball.  When I get close to the other end, I fold it over instead of keep rolling so the cinnamon sugar mix doesn't all fall out.  
  5. Cut the rolls about 1'' thick or however big or small you'd like them.  
  6. Place on baking sheet. 
  7. Bake about 15 minutes or until golden.
  8. While rolls are baking, make icing by mixing ingredients.  It comes out more pretty and white if you use more almond milk and less margarine. I usually play around with the icing and adding more sugar until it's the desired consistency.
